What you need:

  • 21/2 c potatoes, diced
  • 2 eggs
  • 1/3 c flour
  • 1/8 t pepper
  • 1 t salt
  • vegetable oil
  • 1/2 small onion, chopped
  • sour cream

What you do:

  • Beat eggs until fluffy.  In blender, combine eggs, potatoes, flour,
    pepper, salt and onion.  Blend until potatoes are not lumpy.  
    Drop about 2 T of batter for each pancake into skillet with hot
    oil.  Fry until crispy brown on the outside.  Serve with sour
    cream.
