A Few Simple Slow Cooker Potato Recipes

Have you ever tried cooking potatoes in your slowcooker? Cooking them nice and slow results in some delicious dishes. Potatoes are also very inexpensive and there are hundreds of different ways you can prepare them. These simple vegetables can be turned into dinner, lunch and even breakfast meals that are tasty and filling. They make both great sides and enitre meals like the slow cooker soup for example.Ready to give a few of my favorites a try? Here are three of my best slow cooker potato recipes. Your family will gooble them up and keep asking for more (mine sure did).
Potato Soup From The Crockpot
3 big potatoes, skin removed and cut into chunks
1 lg. onion
1 carrot (sliced)
1 stalk of celery, cut into chunks
1 tablespoon of parsley
5 c. water
4 chicken bouillon cubes
1 tbsp. salt
Pepper to taste
1 and a half cups of milk
Combine the veggies, seasonings and the water in your crockpot. Cook everything on high for about 5 hours or on low for 8 to 10 hours or until the potatoes start to fall apart. Add the milk about an hour before serving the soup. The soup is great as is, but can also be pureed in a blender or with a hand blender.
Creamy Crockpot Hash Browns
These arent your typical hash browns, but boy are they good. Perfect as a simple side for dinner or to take to a breakfast or brunch potluck.
1 (32 oz.) pkg. frozen hash browns
1 lb. Velveeta cheese
1 (16 oz.) sour cream
2 cans cream of mushroom soup
1 stick melted butter
Put all into crock stirring. Start on high until the mixture becomes bubbly, and then turn your crockpot to low and cook everything for 4 hours.
I find it helps to butter the crockpot before adding everything. It makes for easier cleanup when youre done. I use part of the stick of butter, then melt the rest and add it to the recipe.
Any other type of "cream of..." soup can be used to replace the cream of mushroom soup. Of course you can also make your own.
Crockpot Scalloped Potatoes
12 med. potatoes
1/4 c. chopped onion
1 c. sour cream
1 can cream of chicken soup
1 c. shredded cheddar cheese
1/2 c. butter
1 tsp. salt
1/2 tsp. pepper
Peel the potatoes, chop them and put them in the slowcooker. Combine everything else in a small bowl and pour it over the veggies. Cook everything on high for 4 hours or low for 6 to 7 hours or until the potatoes are nice and tender.
