What you need:

  • 12 medium potatoes, unpeeled
  • 1 lb bacon, cooked crisp and crumbled
  • 1 c sharp cheddar cheese, shredded
  • 1 c mayonnaise
  • 1/2 c onion, chopped
  • 1/2 c celery, sliced
  • salt and pepper to taste

What you do:

  • Cut potatoes into bite sized pieces.  Boil potatoes in salted water
    until tender, but not mushy; drain.  Place potatoes back into pot
    you boiled them in.  Add celery, onion, bacon, mayonnaise and
    half of the cheese and gently mix.
  • Spray a large baking pan with non-stick spray.  Add potato
    mixture to pan and season with salt and pepper.  Top with
    remaining cheese.  Bake in a 350 degree preheated oven
    uncovered for 30 minutes, or until cheese is lightly browned and
    casserole is heated through.
