What you need:
- 12 medium potatoes, unpeeled
- 1 lb bacon, cooked crisp and crumbled
- 1 c sharp cheddar cheese, shredded
- 1 c mayonnaise
- 1/2 c onion, chopped
- 1/2 c celery, sliced
- salt and pepper to taste
What you do:
- Cut potatoes into bite sized pieces. Boil potatoes in salted water
until tender, but not mushy; drain. Place potatoes back into pot you boiled them in. Add celery, onion, bacon, mayonnaise and half of the cheese and gently mix.
- Spray a large baking pan with non-stick spray. Add potato
mixture to pan and season with salt and pepper. Top with remaining cheese. Bake in a 350 degree preheated oven uncovered for 30 minutes, or until cheese is lightly browned and casserole is heated through.
