What you need:

  • 3 lbs Yukon Gold potatoes, cooked and cubed
  • 4 slices bacon, cooked crisp and crumbled
  • 3 hard boiled eggs, chopped
  • 2 c celery, sliced
  • 1 c mayonnaise
  • 1/2 c green onion, finely chopped
  • 2 T white vinegar
  • salt to taste
  • black pepper to taste

What you do:

  • Combine all ingredients in a large bowl.  Serve immediately or
    cover, chill and refrigerate.
