What you need:

  • 2 small ripe bananas, mashed
  • 1 c flour
  • 1 c milk
  • 1 egg, beaten
  • ¼ c chopped toasted pecans
  • 2 T cinnamon applesauce
  • 1 T sugar
  • 2 t baking powder
  • ¼ t salt

What you do:

  • Mix flour with sugar, baking powder and salt in a bowl.  In a
    different bowl, combine egg with milk, applesauce, pecans and
    mashed bananas.  Combine dry mixture with wet mixture.  
  • Spray a griddle with non-stick cooking spray then heat over low to
    medium low heat.  Scoop batter onto griddle (use ¼ c per
    pancake), make sure to leave enough space between pancakes
    as they will spread out.  Cook until golden brown on both sides,
    about 7-10 minutes total.
