What you need:

  • 1 lb fresh shrimp or frozen thawed shrimp, shelled and deveined
  • 1/4 c lemon juice
  • 3 T olive oil
  • 1 T paprika
  • 1 t cayenne pepper
  • 1 t cumin
  • 1 t coriander
  • 1 t curry powder
  • 1 t salt
  • 1/2 t minced garlic
  • 1/4 t black pepper

What you do:

  • Combine all ingredients in an airtight container or bag and mix.  
    Place in refrigerator and allow to marinate for 4 hours or more,
    mixing once to re-coat shrimp in marinade halfway through.
  • Slide shrimp on grilling skewers and grill over medium heat for 3-
    4 minutes per side, or until not opaque but pink.
