It is a delicious and comforting recipe for the cold winter months. This hearty soup is perfect for a family meal when served hot. It is also a healthy soup that you van cook at your home. Check out the recipe below.
16 ounces of bratwurst, casings properly removed
2 peeled and cubed potatoes
1 chopped onion
2 cups of water
1 chopped medium head cabbage, chopped
Three cups milk, equally divided
All-purpose flour – 3 tablespoons
Diced Swiss cheese – 4 ounces
Take a large skillet, and on medium-high heat, sauté the sausage for about 10 minutes until it is evenly browned and crushed. Drain out well all the excess fat.
In a big pot on high heat, mix the potatoes, onion, browned sausage and water. Let it boil, decrease heat to low, and let it simmer for about 20 minutes. Add cabbage, returning it to a boil, lessen the heat, and let it simmer for around another 20 minutes. Add 2 and 1/2 cups of milk, and heat slowly to keep it just under a boil. (Note: Do not attempt to do this too fast, the milk will burn, and will stick to the pot bottom.)
In a different small bowl, with the rest of the milk, blend the flour and add the mixture to that pot gradually, stirring continuously, so that no lump is formed. (Note: check you remove all the lumps since they will never cook out on their own.)
After the mixture thickens in the pot, add some cheese, and stir intermittently until the cheese melts well.
You serve this hot soup with crusty bread slices. Instead of bratwurst, you can use regular pork sausages or Italian sausages. You can also use vegetable stock in place of normal water. It adds to the taste.
