What you need:

  • 1 lb tilapia fillets
  • 2/3 c Italian bread crumbs
  • 1/3 c mayonnaise
  • 1/3 c Parmesan cheese

What you do:

  • Preheat oven to 375 degrees.  Spray a shallow baking pan with
    non-stick spray.
  • Spread both sides of fillets with mayonnaise.  Combine bread
    crumbs and Parmesan cheese on a shallow bowl or plate.  
    Dredge tilapia fillets in bread crumb mixture.  Place fish in baking
    pan.  Bake for 20-22 minutes, or until fish flakes easily with fork.
