What you need:

  • 3 lbs boneless skinless chicken thighs
  • 2 large tomatoes, chopped
  • 1 large onion, sliced
  • 1 lb fresh mushrooms, sliced
  • 2 garlic cloves, minced
  • 1 c chicken broth
  • 1/4 t red pepper flakes
  • 1/4 t oregano
  • 1 c white wine
  • 1/4 t pepper
  • 1/2 t salt
  • 1/2 c flour
  • 1/4 c olive oil

What you do:

  • Combine salt, pepper and flour in a shallow bowl.  In a small
    bowl, add olive oil.  Dip chicken in oil, then roll in flour.  Add
    chicken to crock-pot.  Add remaining ingredients and cook,
    covered, for 7-8 hours.
