What you need:

  • 2 lbs asparagus, trimmed
  • 1/2 c non fat plain Greek yogurt
  • 3 T lemon juice
  • 2 T heavy cream
  • 1/4 t salt
  • 1/8 t black pepper

What you do:

  • Fill a large saucepan with salted water and bring to a boil.  Fill a
    large bowl with ice water.
  • Place asparagus in boiling water.  Cook, uncovered, for 5
    minutes.  Remove asparagus from saucepan and place in ice
    water.  When asparagus is cool, drain and pat dry with paper
    towels.
  • In a small bowl, combine Greek yogurt, heavy cream, lemon
    juice, salt and pepper.  Spoon sauce over asparagus and serve.
