What you need:

  • 16 oz dried small white beans, rinsed and drained
  • 2 lbs boneless beef round steak, trimmed of fat and cut into bite
    sized pieces
  • 4 cups hot water
  • 28 oz can diced peeled tomatoes, undrained
  • 4 oz can diced green chiles
  • 4 garlic cloves, crushed
  • 3 T chili powder
  • 1.5 T cumin
  • 1 T dried oregano
  • 1 t ground coriander
  • 1/8 t cayenne pepper
  • 1/8 t black pepper
  • 1 t salt

What you do:

  • Place all ingredients into a 5-6 quart crock pot and mix.  Cook
    covered for 8 hours on low, or until beans are tender but not
    mushy.
