What you need:

  • 2-3 lbs beef short ribs
  • 2 large carrots, sliced
  • 2 celery ribs, sliced
  • 2 garlic cloves, minced
  • 1 large onion, chopped
  • 1 c water
  • 1/4 c red wine vinegar
  • 2 bay leaves
  • 1 t dried marjoram
  • salt to taste
  • black pepper to taste

What you do:

  • Place carrots, celery, garlic, onion, water, red wine vinegar, bay
    leaves and marjoram in a 3.5 quart or larger crock pot.  Rub ribs
    with salt and black pepper.  Place short ribs on top of vegetables
    in crock pot.  Cover and cook for 7-9 hours on low setting.  Ribs
    should be falling off the bone when done.
