What you need:

  • 3 (15 oz) cans cannellini beans, drained
  • 3 c water
  • 3 t chicken bouillon granules
  • 3 c cooked chicken, chopped
  • 1 large onion, chopped
  • 2 medium green peppers, chopped
  • 2 garlic cloves, minced
  • 2 jalapeno peppers, chopped
  • 1 T ground cumin
  • 1 t dried oregano
  • 1/4 t salt
  • 1/4 t black pepper

What you do:

  • Combine all ingredients into a 3.5 quart or larger crock pot and
    mix.  Cook, covered, for 8 hours on low.  Serve topped with
    tortilla chips in lieu of crackers.
