What you need:

  • 2 lbs lean ground beef
  • 3 slices white bread
  • 2 eggs, beaten
  • 1 c onion
  • 1/2 c celery, chopped
  • 1/2 c green bell pepper, chopped
  • 2 garlic cloves, minced
  • 1/4 c milk
  • 1/4 c ketchup (separated)
  • 1 T Worcestershire sauce
  • 1.5 t Creole seasoning
  • 1/8 t black pepper

What you do:

  • Preheat oven to 350 degrees.  Spray a loaf pan or baking pan
    with non stick spray.
  • Soak bread in milk.  In a large bowl, combine all ingredients
    except for 1/2 the ketchup and shape into a loaf.  Place meatloaf
    into pan.  Spread the remaining ketchup over the top of the
    meatloaf.  Bake, covered, for 45 minutes.  Remove cover and
    bake for an additional 30 minutes.  Let stand 5 -10 minutes
    before slicing.
