What you need:
- 1 lb ground beef
- 14.5 oz can diced tomatoes, undrained
- 8 oz can tomato sauce
- 4 oz uncooked penne pasta, cooked al dente and drained
- 1 small zucchini, thinly sliced
- 1/2 c onion, chopped
- 1 garlic clove, minced
- 1/4 t dried oregano
What you do:
- In a large skillet, brown ground beef with onion and garlic; drain.
Add oregano, tomatoes and tomato sauce to skillet and bring to
a boil. Reduce heat and simmer on low for about 5 minutes. Mix
in zucchini and pasta and continue to simmer on low for 5
minutes, or until heated through.
