We love fried rice and I make several different kinds. This ham and egg recipe is one of our family favorites. I always make plenty so we are sure to have leftovers. The leftover fried rice makes a great snack or lunch the next day.
We usually have it with asparagus or broccoli, fresh sliced tomatoes and some hard crunchy breads. It also goes very well with a meat dish and a fresh salad, my two grandsons love to have it all buy itself, and its a great way to get them to eat vegetables without even trying.What you will need:
2 tbsp. soy sauce
2 tsp. sesame oil
1/4 tsp. pepper
4 tsp. canola oil divided
2 eggs, slightly beaten
1 tbsp. peeled, finely chopped fresh gingerroot
2 garlic cloves, finely chopped
4 cups cooked rice, chilled
2 cups frozen peas and carrots
3/4 cup ham cubes
1/2 cup sliced green onions
First in a small bowl combine the soy sauce, sesame oil and the pepper. Set aside. Next brush a 12-inch nonstick skillet or wok with 1 teaspoon of the canola oil. Add the eggs to the skillet. Cook and stir over a medium heat, breaking the eggs into small pieces or shreds. Remove eggs; set aside. Wipe the skillet with paper towels.
Add the remaining 3 teaspoons of canola oil to the skillet. Add the ginger and the garlic; cook and stir 1 minute. Add chilled rice, and peas and carrots; cook and stir for about 8 minutes.
Sprinkle the soy sauce mixture over the rice mixture in the skillet. Cook for 5 more minutes, lifting and turning the rice mixture occasionally. Add ham; cook and stir 1 minute more or until heated through. Stir in green onions and cooked eggs; heat through. Serve immediately.
The total preparation time for this fried rice is about 5 minutes and the total cooking time is approximately 25 minutes. This very quick and easy recipe serves 6 and can easily be doubled for a larger crowd!
