What you need:

  • 2 lbs ground turkey
  • 1 c cracker crumbs
  • 6 oz can tomato paste
  • 2/3 c pizza sauce
  • 1/2 c Parmesan cheese
  • 2 eggs
  • 1/2 c chopped green pepper
  • 1/2 c onion
  • 1 t oregano
  • 1 t salt
  • 1/4 t pepper
  • 1 c shredded mozzarella cheese

What you do:

  • Combine ground turkey, cracker crumbs, tomato paste, eggs,
    Parmesan cheese, onion, green pepper and seasonings.  Mix
    thoroughly with hands and form into a loaf.  Place meatloaf in a
    loaf pan.  Bake, covered, for 45 minutes at 350 degrees.
  • Pour off drippings.  Spread pizza sauce over meatloaf and
    continue cooking, uncovered, for 15 minutes. Top with
    mozzarella cheese and cook until cheese melts.
