Homemade Chicken Enchilada Recipe

Another easy quick healthy meals for busy parents on the run. If your in the mood for a spicy night, try cooking homemade Mexican cooking at home. The best part about home cooking is you know what you are putting into your foods. This sure beats driving the car through the drive through at Taco Bell.

Traditional Mexican foods can be very high in fat and carbohydrates. This recipes keeps the bold zesty flavor without all the high fat and carbs. Always keep in mind when trying to cook healthy try reduced fat, low sodium and look for high fiber foods. Those simple starts equal a road to healthy eating.

Easy Recipe for Homemade Chicken Enchilada Recipe.

Ingredients:

1 Tablespoon Canola Oil

1/2 Cup of Chopped Onion

1 Tablespoon Minced Garlic

4 Ounces Dized Green Chilies (drained)

2 Cans (8 oz) No salt Added Tomato Sauce

1 Can (14.5 oz) No Salt Added Diced Tomatoes

2 Teaspoons of Cumin Powder

2 Teaspoons Garlic Powder

1 Teaspoon Chili Powder

1 Teaspoon All Purpose Flour

2 Cups Cooked and Shreded Chicken Breast

1/2 Cup Black Beans (Rinsed and Drained)

1/2 Cup Frozen Corn

8 Wheat Tortillas

1 Cup of Reduced Fat Monterey Jack Or Cheddar Cheeses

Coat a large saute pan with oil. Saute onion and garlic until tender; add drained chilies, tomato sauce and tomatoes. Sprinkle the cumin, garlic powder, chili powder and flour. Stir well to combine. Add one cup of thet sauce to the shredded chicken, mix the rinsed and drained black beans and corn. Microwave tortillas on high for 30 seconds to soften and make them softer. Coat the bottom of a 13 x 9" pan with the sauce. Divide chicken mixture among the 8 tortillas. Fold tortillas over the filling and place in the pan with seam side down. Top the remaining sauce and the shredded cheese. Back for 15 minutes in a preheated oven at 350 degrees, until the cheese melts. Serve on a bed of shredded lettuce, you can also use low fat sour cream for the side.

Each enchilada is 230 calories, 6 grams of fat, 4 grams of fiber and 17 grams of protein.
