Poppy Seed Chicken Recipe (Ingredients)
* 2-3 pounds of cooked and shredded boneless, skinless chicken
* 1 can of cream of mushroom soup
* 8 ounces of sour cream
* 40 Ritz crackers (approx. 1 sleeve full), crumbled
* 2 tablespoons of poppy seeds
* 1 stick of margarine or butter
Poppy Seed Chicken Casserole (Instructions)
Step 1: Place the stick of margarine in your frying pan and turn on the heat to low to melt the margarine. For those of you who are health conscious and watching your calories you can use low fat butter or just simply use half a stick of the butter or margarine.
Step 2: Open up your box of Ritz Crackers and take out one whole sleeve of crackers. Empty all the crackers into a large zip lock bag and crush the crackers with a rolling pin or meat tenderizer to make sure they are completely crumbled. You can also use other brands of similar low fat crackers if you wish.
Step 3: Add 2 tablespoons of poppy seeds into the bag and mix well with the crumbled crackers.
Step 4: In a separate bowl, pour in the 1 can of cream of mushroom soup and 8 ounces of sour cream and then mix well. Again, if you are health conscious you can also use reduced fat sour cream and soup since this doesn't change the flavor at all.
Step 5: Grease your casserole dish and layer half the chicken, half the soup mixture, and half the cracker mixture. Repeat this layer and then top it off with the cracker mixture.
Step 6: Place it in the oven and bake at 350 degrees for approximately 30-35 minutes. You're done!
If you are short on time you can mix all the ingredients, except for the crackers & poppy seed mixture, put it in a 9 x 13 inch baking dish and top with all the crackers. It tastes the same and is much quicker to prepare.
