What you need:

  • 21/2 lbs of pork chops
  • 1 small onion, chopped
  • 2 lbs sauerkraut with caraway seed, rinsed and drained
  • 12 oz beer
  • 2 c barbecue sauce
  • 1/4 t black pepper

What you do:

  • Trim the majority of fat off the pork chops, leaving just a little for
    flavor.  Place chops in slow cooker with sauerkraut and onion.
  • In a medium bowl, combine pepper, barbecue sauce and beer;
    mix.  Pour sauce over pork chops and kraut.  Cook, covered, for
    8 hours on low.
