What you need:

  • 5 lbs potatoes, cooked and cubed
  • 1 lb bacon, cooked crisp and crumbled
  • 4 c water
  • 1 large onion
  • 3/4 c vinegar
  • 3/4 c flour
  • 3/4 c sugar
  • 2 T butter
  • 1 T parsley flakes
  • salt to taste
  • black pepper to taste

What you do:

  • Heat butter in a medium skillet.  Add onion and cook until
    translucent, but not browned.  
  • In a large saucepan, add water, vinegar and sugar.  Blend in
    flour.  Cook over medium heat, stirring occasionally, until
    thickened.  Add bacon, onion and parsley to mixture and simmer
    for 10 minutes.  Add potatoes to saucepan and mix.  Season with
    salt and pepper and serve warm.
