What you need:

  • 1 lb medium scallops
  • 3 T butter
  • 3 T olive oil
  • lemon pepper to taste
  • Koser salt to taste

What you do:

  • Rinse scallops and dry with paper towels.  Season scallops with
    salt and lemon pepper.  
  • Heat butter and olive oil in a large skillet over low heat until
    butter melts.  Turn up heat to high.  When butter oil mixture
    starts to smoke, add scallops to skillet.  Make sure scallops are
    not touching each other in pan.  Cook scallops over high heat 2
    minutes per side.  Do not move scallops around pan while
    cooking to create a nice sear on both sides.  Serve immediately.
