What you need:

  • 14.5 - 15 oz can sliced beets, drained
  • 1 large onion, sliced
  • 2 T sugar
  • 1/3 c cider vinegar
  • 1/3 c water
  • 3/4 t salt
  • 1/2 t dry mustard

What you do:

  • Combine sugar, vinegar, water, salt and dry mustard in a
    medium bowl.  Add beets and onion and mix.  Cover bowl and
    refrigerate for at least 2 hours; serve.
