What you need:

  • 2 c fresh green beans, cut into bite size pieces
  • 3/4 c diced tomatoes, undrained
  • 2 T onion, minced
  • 1 T olive oil
  • 1 garlic clove, minced
  • 1/2 t oregano
  • salt to taste

What you do:

  • Heat oil in a medium skillet.  Add onion, garlic and oregano and
    saute until onion is tender.  Stir in green beans until well mixed.  
    Season with salt, add tomatoes and saute for a couple of
    minutes until green beans are tender, but still firm; serve.
