What you need:

  • 3/4 lb beef stew meat
  • 6 c water
  • 6 t beef bouillon granules
  • 2 large tomatoes, chopped
  • 2 ribs celery, sliced
  • 2 medium carrots, sliced
  • 1 medium onion, chopped
  • 1 c potato, diced
  • 1/3 c quick-cooking barley
  • 1 bay leaf
  • 1 t dried thyme
  • 1/8 t black pepper

What you do:

  • Add all ingredients except barley to a 4 quart or larger crock pot
    / slow cooker and mix.  Cook, covered, for 7.5 hours on low.  
    Remove cover, stir in barley, cover and cook for 30 minutes
    more.  Remove bay leaf and serve.
