Super Bowl Sundae

Everyone I know is planning a Super Bowl Party. Many are planning tailgate parties where everyone brings a portable grill to the home of the Grill Master (you know, the guy or gal with that beautiful, big outdoor kitchen) and serves up their favorite dish from the grill. This recipe is for those of you who want to do something very non-traditional - sure to showcase your grilling talent. We call is Super Bowl Sundaes aka Grilled Pineapple Boats. It's simple to do but spectacular on the grill.

Prep Time: 10 minutes

Cook Time: 4 minutes

Total Time: 14 minutes

Yield: Serves 6 to 8

Ingredients:
1 pineapple, peeled, cored and cut into 1 inch slices
High temperature cooking oil (canola, peanut, etc)

Marinade/Sauce:
1/2 cup brown sugar or 1/3 cup honey
2 tablespoons melted butter
1/4 cup of good Brandy or Cognac
1 teaspoon cinnamon

Topping:
1 gallon vanilla ice cream
1 pound smashed strawberries (in 2 Tablespoons of sugar)

Mix all of the marinade ingredients together in a bowl. Place the sliced pineapple in a plastic bag, cover with the marinade, seal the bag and let the pineapple and marinade sit in the refrigerator for 1 or more hours.

Hull the strawberries and place in a large bowl. Add 2 Tablespoons of sugar and mash lightly. Place covered in the refrigerator and allow to juice out.

When it's time to grill the pineapple, prepare your grill grates with a light coating of high temperature cooking oil (canola, peanut, etc). Fire up your gas grill to High. Once it has come to temperature immediately turn it back to Medium. Place pineapple straight out of the bag on to the grates (do not drain). Grill 2 minutes on each side. Remove immediately to a warm plate.

While the pineapple is grilling, warm up the remaining marinade and mix the strawberries one last time.

To serve, plate each pineapple slice onto a small plate or into a soup bowl. Place a large scoop of vanilla ice cream on top of each slice. Drizzle with the marinade. Add a nice portion of strawberries and serve immediately.

This is a very "showy" dessert that screams "I have Conquered my Grill". Once your friends have tasted this, they'll ask for it time and again and again.
