What you need:

  • 48 oz water
  • 1/2 lb beef stew meat
  • 2 large tomatoes, chopped
  • 1 c onion, chopped
  • 1 c celery, sliced
  • 1 c potato, diced
  • 1 c carrot, sliced
  • 1/3 c quick cooking barley
  • 3.5 t beef bouillon granules
  • 1 bay leaf
  • 1 t dried thyme
  • 1/8 t black pepper

What you do:

  • Place all ingredients except barley into a 5 quart or larger crock
    pot and mix.  Cover and cook on low for 7-8 hours, or until
    vegetables are tender but not mushy.  Add barley during the last
    30 minutes of cooking time and mix.  Remove bay leaf and serve.
