What you need:

  • 9 oz package fresh or frozen cheese ravioli
  • 28 oz can crushed tomatoes
  • 26 oz container reduced sodium chicken broth
  • 2 medium zucchini, diced
  • 1 large green pepper, diced
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 T olive oil
  • 1/2 t dried marjoram
  • 1/2 t dried basil
  • 1/8 t crushed red pepper
  • pinch black pepper

What you do:

  • Heat oil in a large saucepan.   Add green pepper, garlic, zucchini
    and onion and saute for 2 minutes.  Add tomatoes, chicken
    broth, marjoram, red pepper, basil and black pepper and bring
    to a boil.  Add ravioli and cook per package directions; serve.
  • Great served with seasoned croutons.
