When it comes to salads I am always looking for ways to spice them up, and if I can I always want to add in some of my favorite fruits from one of our dwarf fruit trees. This salad is packed with my favorite pears picked fresh from our dwarf trees. It is a very quick and easy salad to put together. This salad is made from butterhead lettuce, if you have never tried this lettuce you will be pleasantly surprised at the flavor and texture. It make a simply wonderful salad.
It can easily be served with many different dishes. It goes great with grilled steaks or salmon and vegetables. All you need then is some good crunchy bread to complete the meal. It is also a great salad to have for a light lunch or brunch with friends. Our grandsons will eat the fresh pears and walnuts but do not really care for the butterhead lettuce, so it can easily be replaced with a lettuce they enjoy. Hopefully when they are older they will appreciate the differences in lettuce.
What you will need:
2 med. fresh picked pears, sliced
2 tbsp. fresh lemon juice
8 cups butterhead lettuce, torn into pieces
1 tbsp. olive oil
2 tbsp. walnuts, toasted
1/4 cup feta cheese, crumbled
1 tbsp. red wine vinegar
Freshly ground black pepper
After picking some fresh pears from the dwarf pear tree the first thing you will want to do is place all the sliced pears in a medium bowl and mix in the lemon juice, set aside. This is also a great time to wash a few of the extra pears from your dwarf trees to give to other family members and friends
The next step, place the butterhead lettuce leafs on 4 salad plates (you can use other types of lettuce if butterhead is not readily available or liked); drizzle wit olive oil. Top the lettuce with the walnuts, feta cheese, red wine vinegar and pepper to taste. Take your pear slices and arrange them on top of the salads and serve. Remember that this salad makes a wonderful lunch or bruch meal all by itself or with a crunchy piece if hard bread, or even a late night snack. It's perfect anytime!
