What you need:

  • 2 lbs boneless skinless chicken breast halves
  • 4 apricots; peeled, pitted and sliced
  • 1 c brown sugar
  • 2 T lemon juice
  • 1/8 t cinnamon, ground
  • 1/8 t ginger, ground

What you do:

  • Preheat oven to 350 degrees.  Spray a 9 x 13 inch baking dish
    with non-stick spray.
  • Layer chicken in the bottom of the baking dish.  Sprinkle half the
    brown sugar over the chicken breasts.  Place apricot slices over
    chicken.  Top with remaining brown sugar, cinnamon, ginger and
    lemon juice.  Cover with foil, place in the oven and bake for 35-45
    minutes, or until cooked through.
