What you need:

  • 2 lbs round steak cut in bite sized pieces
  • 3/4 lb bacon cooked crisp, drained, and broken into pieces
  • 28 oz can whole tomatoes, undrained and chopped
  • 2 (15 -16 oz) cans kidney beans, drained and rinsed
  • 8 oz can tomato sauce
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 2 celery ribs, sliced
  • 2 T chili powder
  • 2 t ground cumin
  • 1 T parsley, chopped
  • 2 garlic cloves, minced
  • 3 T vegetable oil
  • 1/2 t salt
  • 1/4 t black pepper

What you do:

  • Heat oil in a large skillet.  Add round steak and cook for a few
    minutes until browned; drain.  Place beef in a 3.5 quart or larger
    crock pot.  Add remaining ingredients and mix.  Cook, covered,
    for 6-8 hours on low.  Serve topped with shredded cheddar
    cheese, sour cream or jalapenos.
