What you need:
- 11/2 lbs ground beef
- 3/4 c onions, chopped
- 1 c corn, frozen
- 1/2 c green pepper, chopped
- 1 package taco seasoning
- 14.5 oz can diced tomatoes, undrained
- 2 c cheddar cheese, shredded
- 10 oz can enchilada sauce
- 9 corn tortillas (small)
What you do:
- Preheat oven to 350 degrees. Spray a 9 inch casserole dish
with non stick cooking spray. Brown ground beef and onion in a large skillet; drain and return to pan. Add taco seasoning, green pepper, enchilada sauce, corn and diced tomatoes and stir. Cook on high heat until mixture comes to a boil, stirring occasionally. Remove from heat.
- Spread a thin layer of beef mixture (about 1/4) on the bottom of
a 9 inch casserole dish. Top with 3 overlapping tortillas, another 1/4 of beef and 1/3 of the cheese. Repeat layers twice more starting with tortillas and ending with cheese. Bake, uncovered, for 30-35 minutes. Casserole will be lightly browned with cheese melted when done. May top with black olives, sour cream, green onions and/or hot sauce before serving.
