My favorite recipe to make is broccoli casserole. I love broccoli any kind of way, steamed, raw, saut?ed or in casseroles, it doesn't matter. It is my favorite vegetable to eat. This recipe I'm sharing with you was given to me by a very nice woman I used to work with. She actually gave me many of her recipes but this is the one I love the best. I used to have her recipes but I lost them. My variation is slightly different from hers but the ingredients are still the same. Every time I make it people always say how good it is and it is the most requested dish for me to prepare. First thing people ask of me is did you make broccoli casserole for holiday meals? This recipe is a winner.
2 to 3 bunches of broccoli
1 jar Old English cheese
1 sleeve Ritz crackers
Half stick of butter
2 tbsp butter
1 cup shredded sharp cheddar cheese
1 can of evaporated milk (regular milk will do the job)
Salt and pepper to taste
Wash broccoli and put it in a sauce pan with 2 tbsp butter, salt and pepper, and a little bit of water to steam the broccoli or use a vegetable steamer if you have one; set aside and pre-heat oven. In a small skillet melt half a stick of butter. Once it melts take a little more than half of the Ritz crackers from the package and crush them up into fine pieces adding them to the melted butter. Stir around until it becomes a thick buttery crust. Get a 2 quart baking dish and spread the cracker crust pressing it down on the bottom of the casserole dish. Add the steamed broccoli on top of the crust. Take a sauce pan and add a cup of the can milk then add the jar of old English cheese and let cook until sauce thickens. You can use the entire can of milk if you want to add the shredded cheese into your sauce. Pour the cheese sauce over the broccoli. I take the cup of shredded sharp cheddar cheese and sprinkle over the top of the casserole. Then crush the remainder of the Ritz crackers into fine pieces and sprinkle over the top of casserole. Place the casserole dish inside the oven on 350 degrees and bake until golden and bubbly or about 30-40 minutes.
