What you need:
- 3 lbs boneless skinless chicken thighs
- 2 large tomatoes, chopped
- 1 large onion, sliced
- 1 lb fresh mushrooms, sliced
- 2 garlic cloves, minced
- 1 c chicken broth
- 1/4 t red pepper flakes
- 1/4 t oregano
- 1 c white wine
- 1/4 t pepper
- 1/2 t salt
- 1/2 c flour
- 1/4 c olive oil
What you do:
- Combine salt, pepper and flour in a shallow bowl. In a small
bowl, add olive oil. Dip chicken in oil, then roll in flour. Add chicken to crock-pot. Add remaining ingredients and cook, covered, for 7-8 hours.
