What you need:

  • 3-4 lbs pork spare ribs
  • 1 small onion, chopped
  • 2 lbs sauerkraut with caraway seed, rinsed and drained
  • 12 oz beer
  • 2 c barbecue sauce
  • 2-3 T vegetable oil
  • 1/4 t black pepper

What you do:

  • Heat oil in a large skillet.  Add spare ribs and brown on both
    sides.  Place ribs in a 4 quart or larger slow cooker with
    sauerkraut and onion.
  • In a medium bowl, combine pepper, barbecue sauce and beer;
    mix.  Pour sauce over spare ribs and kraut.  Cook, covered, for 8
    hours on low.
