What you need:

  • 1 lb boneless, skinless chicken breast halves, chopped into bite
    sized pieces
  • 10.75 oz can cream of mushroom soup
  • 10.75 oz can cheddar cheese soup
  • 2.5 c cooked rice
  • 1 medium onion, chopped
  • 2 celery ribs, chopped
  • 1/2 c green pepper, chopped
  • 3 T butter
  • 2T olive oil

What you do:

  • Preheat oven to 350 degrees.  Spray a 13 x 9 inch baking pan
    with non-stick spray.
  • Heat oil in a large skillet.  Add chicken and cook until browned;
    set aside.  Heat butter in skillet.  Add veggies and saute until
    tender but not browned.  Turn off heat.  Add soups, chicken and
    rice to skillet and mix.  Pour mixture into baking pan and bake for
    40 minutes.
