What you need:

  • 1 lb grouper fillets
  • 1.5 c Italian style bread crumbs
  • 1 c flour
  • 1 egg, beaten
  • 2 T milk
  • canola or vegetable oil
  • salt to taste
  • black pepper to taste

What you do:

  • Fill the bottom of a large skillet or cast iron pan with 1/4 inch oil.  
    Heat oil to 350-375 degrees.  
  • Set up 3 medium sized bowls side by side.  Place flour, salt and
    black pepper in the first bowl, milk and egg in the second, and
    Italian style bread crumbs in the third bowl.  
  • Dredge grouper fillets in flour, dunk in egg/milk batter, then coat
    with Italian style bread crumbs.  Place fish in hot oil and fry for 6-
    8 minutes, turning fish once halfway through cooking time.  Drain
    on paper towels before serving.
