What you need:

  • 4 boneless pork chops
  • 1 medium onion, sliced
  • 1/3 c whole cranberry sauce
  • 1/4 c apple cider
  • 2 T butter
  • 2 T orange juice
  • 2 T Dijon mustard
  • 1/4 t ground ginger
  • salt to taste
  • black pepper to taste

What you do:

  • Melt butter in a large skillet over medium heat.  Season pork
    chops with salt and pepper.  Add pork chops and onion to skillet.  
    Brown chops on both sides.  Pour in apple cider and cover.  
    Reduce heat to low and cook for 5-10 minutes or until pork chops
    are cooked  through; drain.
  • Combine cranberry sauce, orange juice, mustard and ginger in a
    bowl.  Pour mixture over pork chops.  Cook until heated through,
    about 5 minutes.
