What you need:

  • 8 medium potatoes, peeled and cut into bite sized pieces
  • 2 hard boiled eggs, peeled and chopped
  • 1 c non-fat plain Greek yogurt (preferably Chobani brand)
  • 2 c celery, chopped
  • 3 T vinegar
  • 2 T onion, diced
  • 1.5 T sweet pickle relish
  • 1 T prepared mustard
  • 1 T dried parsley flakes
  • salt to taste
  • black pepper to taste

What you do:

  • Boil potatoes in salted water until tender but not mushy.  Drain
    and rinse under cold water.  
  • In a large bowl, mix together Greek yogurt, celery, vinegar,
    onion, pickle relish, parsley and mustard.  Add potatoes, egg,
    salt and black pepper and gently mix.  Chill and serve, or serve
    immediately if desired.
