What you need:

  • 16 oz package baby carrots
  • 3/4 c apple juice
  • 2 T butter
  • 2 t maple syrup
  • 1/2 t sugar
  • 1 t apple cider vinegar
  • salt and pepper to taste

What you do:

  • Sauté carrots in hot butter over medium high heat, stirring
    frequently, about 7 minutes or until carrots are very lightly
  • Add remaining ingredients and heat to a boil.  Reduce heat to
    medium and cook for about 13 -15 minutes, stirring
    occasionally.  When done, carrots will be tender and liquid
    reduced to a glaze.
