 What you need:
 
 
 4 eggs
1 t vanilla
1 c chopped pecans
11/2 c salad oil
2 c sugar
2 c flour
1.5 t cinnamon
1/4 t nutmeg
2 t baking soda
3 c grated carrots
1/2 t salt
 What you do:
 
 
 Blend sugar, oil, vanilla and eggs in a large bowl.  Stir in flour, baking soda, salt, nutmeg and cinnamon.  Mix well.  Fold in
 carrots and pecans.  Pour mixture into a lightly greased 9 x 13
 baking pan.  Bake in a preheated oven at 350 degrees for 45
 minutes.  Top with cream cheese frosting after cake has cooled.
