What you need:
- 4 (8 inch) flour tortillas
- 1 c Mozzarella cheese, shredded
- 3 oz sliced pepperoni
- 3/4 c diced tomatoes
What you do:
- Sprinkle cheese over one half of each tortilla. Top cheese with
pepperoni slices. Evenly distribute chopped tomatoes over pepperoni slices.
- Fold over other half of each tortilla and press edges together to
seal.
- Spray a large skillet with non-stick spray. Place quesadillas in
skillet 1 or 2 at a time, and cook over medium heat 2-3 minutes per side, or until nicely browned.
