Jewish Coffee Cake:
In my opinion, this is the best coffee cake I have come across- and I have tried many many coffee cakes- being a coffee lover. You can make this cake for guests, parties or simply as a treat for yourself. You can be very creative, using different jellies, fruits, jams, and anything else your heart desires.
Keep in mind that you can alter the recipe slightly by adding different topping and decorations, as long as you don't change the original recipe.
All ingredients must be at room temperature for the cake to come out perfectly.
450 g butter
1 cup (250 ml) sugar
1 tsp (5 ml) vanilla
225 g sour cream
2 cups (500 ml) flour
1 tsp (5 ml) baking soda
1 tsp (5 ml) baking powder
1. Preheat oven to 180 C.
2. Cream the sugar and butter together, adding eggs one by one and mix the ingredients together slowly.
3. In a separate bowl, mix 1 cup (250 g) chopped walnuts, 1 cup (250 g) brown sugar, and 1 tsp (5 ml) of cinnamon or according to your own taste.
4. Greased and flour a 25 cm x 8 cm length baking tray, add some cake mix in the bottom and then some walnut, sugar and cinnamon mixture. Repeat this process until all the cake mix is in the pan and the cinnamon mixture is a top layer.
5. Bake at 180 C degrees for 45 minutes or until you can prick the centre of the cake and it comes out clean. Let the cake cool and enjoy. I like eating my cake warm with raspberry jam as a topping.
