Add oil to a large skillet and place on medium heat. Add the sausages and stir till they are brown on all sides. Add potatoes and stir again. Add onion, green pepper chunks, cumin, salt and pepper. Sprinkle with Italian seasoning.
Add beer and Dijon mustard. Cover and let the mixture simmer for around 25 minutes. Make sure you stir thoroughly so that the dish resembles chunky potato gravy. Serve in bowls along with French or Italian bread. You are ready to take the Super Bowl party head on!
Recipe #1: Premio's Super Bowl Super-Stuffed Sausage Manicotti

Add eggs, ricotta and cottage cheese to a large bowl. Mix thoroughly. Add a cup of shredded mozzarella cheese. Sprinkle two pinches of salt and pepper. Set aside.
Saute garlic and onions in a pan using virgin olive oil. Cut the sweet and hot Italian sausages into bite sized chunks. Add olive oil and garlic. Saute in skillet till cooked.
Prepare the manicotti pasta by boiling it for around 12 minutes. Place the cheese mixture in a plastic freezer bag, cut off the corner and fill it with the manicotti pasta.
Spread layer of sauce into bottom of casserole and place manicotti on the top. Cover with remaining sauce and top with remaining cheese. Bake for 30 minutes at 350 degrees Fahrenheit until cheese turns brown.
