What you need:
- 48 oz water
- 1/2 lb beef stew meat
- 2 large tomatoes, chopped
- 1 c onion, chopped
- 1 c celery, sliced
- 1 c potato, diced
- 1 c carrot, sliced
- 1/3 c quick cooking barley
- 3.5 t beef bouillon granules
- 1 bay leaf
- 1 t dried thyme
- 1/8 t black pepper
What you do:
- Place all ingredients except barley into a 5 quart or larger crock
pot and mix. Cover and cook on low for 7-8 hours, or until vegetables are tender but not mushy. Add barley during the last 30 minutes of cooking time and mix. Remove bay leaf and serve.
